When I was younger, when I was asked what do you want to be when you grow up! My answer was always Marine Biologist. Because I loved the sea, its creatures, and spent hours with my mum in the rock pools in Durban. Little did I know you had to be super smart for Biology; I always loved the sea.
So, when I walked into the new space where Amura has opened, I could feel the respect it has for the sea, nature, and exceptional food. A respect for the ocean was immediate. Sensed in the air. I felt a strong feeling of storytelling. An atmosphere of excitement was quietly created before a single plate had been served.
It was made clear to me that this was not simply another restaurant opening. I was about to take part in a new chapter for fine dining in Cape Town. Furthermore, within the iconic walls of the Mount Nelson, something entirely original has been crafted.
Where is Amura?
Amura has been unveiled at the legendary Mount Nelson in Cape Town. The hotel, long regarded as the city’s most iconic five-star address, has been reimagined through this immersive dining concept. Located in the heart of the Mother City, the restaurant is surrounded by manicured gardens and timeless elegance. And, a three-Michelin-starred pioneer known as the “Chef of the Sea.” The Chef’s many years of creativity with marine ingredients have been credited to his amazing work in Andalusia. Moreover, his thoughts of exploring the ocean as a pantry. Rather than merely a protein source has been carried across continents.
Chef León’s career has been marked by bold testing and deep respect for marine ecosystems. In my opinion, absolute genius. At Aponiente, sustainable seafood has been taken to a high level of gastronomy through scientific research. And I guess a Chef and team that have a huge amount of creativity. Furthermore, ingredients once overlooked have been taken into fine-dining delicacies under his guidance.
At Amura, this spirit of innovation has been embraced and interpreted through the lens of the Cape. Local chefs have been entrusted with translating León’s ocean-driven ethos into South African waters. As I began the course. It was very clear to me that the opening bites were delicate and precise. Textures were layered flavours. Each bite left your taste buds screaming for more. Each course was truly a masterpiece. A new taste for me, something I had not tasted before. Which was exciting. Therefore, my palate was awakened rather than overwhelmed.
A seafood starter arrived, plated like a tidal pool. Freshness and acidity are balanced with finesse. Each morsel I ate was slowly. An absolute delight each time I took a bite. Furthermore, expectations were not merely met; they were topped with many wows.
The risotto followed, glowing in a bright green hue. This was hands down my best part of the tasting menu. This is rich and creamy. Its aroma carried the essence of the sea. Subtle yet deeply savoury. Moreover, the creaminess was perfect. Making sure the plankton’s oceanic taste was the star of the show. Piped on beautifully, garlic aioli. Literally the perfect match. I adored this plate of food.
